P14 圣诞姜饼(图片也来了)

怕我的模子太小,所以只用了WYNN的双色蛋糕方子的一半材料
不过看样子全部材料也能放进
我烤出来为什么噶难看呢??象是黑面包?而且干了点,是不是时间长了点?
180度烤了50分钟

切开来看还马马乎乎,泡打粉好象放多了点,还是戚风蛋糕受家人的欢迎

笛子MM现在大师级呀.....切开的样子真的很诱人哦!这种蛋糕口感比戚风蛋糕粗一些,结实一些,外皮酥酥的,最超值的地方是非常好做,很适合刚开始想做蛋糕的XDJM:P  当然要是有时间有耐心的话,我也觉得戚风蛋糕口感好些,细腻些,不是麻烦吗?[em02]

这种蛋糕我都是175度烤一个小时,看你的图片不会觉得烤时间太长啊,至于口感基本要凭经验,调整面糊的浓稠度,家里又没有电子称,材料很难加的很准,就得靠感觉了。我觉得笛子MM这个挺成功的 [em41][em41]

恩,这个蛋糕冷了以后味道更好,外皮是硬硬的,我想在烤的时候盖上锡纸,可能表皮就不会那么硬了。

稍微干了点,我看还要多放点黄油

早上起来就开始做泡夫

刚买的大师傅奶油打出来味道很不错

做好了,是不是很诱人啊,味道也很好

前面那批外型难看了点

后来的这批把面团弄小了搓圆了,做出来好看多了

应大家要求补充了配方和做法,我没仔细看396的做法,应该是差不多的吧。我用的是书上的方子,感觉这个泡夫做做很简单的啊。



材料:240ML水(我早上的牛奶没喝完,就代替水做泡夫了,好象没有影响到效果)
   125G黄油(我用的是妈妈之选植物黄油),1/4勺盐(感觉稍微多了点,可以减少点),240ML普通面粉,4个蛋


1:把水,黄油,盐放一个大深锅里充分煮沸
2:把火开到最小,把筛过的面粉加进去,用木勺搅拌混合成一个光滑的球(这个搅拌比较费力的,我手都酸了)
3:离火,把鸡蛋一个一个打进去,每打一个就充分搅拌一次,直到成为一个光滑的球(我搅拌到后来不知道为什么成不了面球,我也不管了,手都酸死,直接就用了)
4:烤盘上垫好锡纸,抹一层油,把面糊用勺子兜进去(我在勺子上抹了油,面糊就不乱粘了,然后用勺子的背把面糊弄的平整一点的面团,因为一个烤盘放不完,就留了一半,后面那半等前面那批做好的时候已经冷掉了,我在手上抹了油,就可以把他们搓成小面团,这样烤出来比第一批好看多了),放面团的时候要留出比较大的空隙,烤好后会膨胀到原来的两倍大。
5:烤箱预热200度,我用180度烤了40分钟,烤的时候不要随意开门去看,时间到了以后,把箱门开一个小缝,继续在里面放5-6分钟样子。泡夫内部就能充分干燥,更加松脆。


在烤泡夫的时候,把大师傅奶油倒出1/3罐。半融化状态的时候,加入适量的绵白糖和柠檬粉。用打蛋机打发就变鲜奶油了。等泡夫冷却后再用裱花袋把奶油灌进去。


没想到一次就能成功,味道真的是很不错,比买来的味道要香多了,邻居家大妈说走到楼梯上就闻到香味了。

方子和尼姑泡夫不一样吧,这个东东我已经两战两败了
