一个朋友说喜欢吃卡士达酱的泡夫,就在网上找到了方子,自己来做。
做了两次,摸索了点经验
材料:蛋黄3个,低粉3大匙,糖两大匙,牛奶1杯,打发的鲜奶油1/2杯
1:蛋黄加1/4的牛奶打散,加入过筛的面粉,拌匀,要没有颗粒的状态(第一次做的时候我按照食谱,直接把蛋黄和面粉搅拌,很稠,做出来就会有颗粒,后来先加了牛奶稀释一下就好很多)
2:用小锅子把牛奶加热到开了以后,把一半牛奶慢慢冲进蛋黄液,边冲边搅拌,拌匀以后倒到锅里与另一半牛奶煮到浓稠,马上离火。整个过程都要不停搅拌(用打蛋器),这样就不太会有颗粒
3:用保鲜膜盖好(以免表面发硬),冷藏一会,加一小匙蓝姆酒(不加也可以,但是加了以后会有很清爽的感觉,我很喜欢),把打发的鲜奶油拌进去
最后我用电动打蛋机搅拌了5分钟,很细腻了
这个酱是填充泡夫用的,拌色拉也很好吃。不妙呀,同学看到我说我胖了很多了[em00][em00]
