我的自制美食(新增凉皮,面筋!)

呵呵,我今天用奶粉试着做了姜撞奶,好像蛮成功的,就是有点受不了姜的味道,辣辣的,好在放了糖。[em25]

方馅饼,是葱油饼变过来的,原来喜欢做葱油千层饼,不过别人说吃葱油饼还要再做菜吃,于是后来就发展成肉馅的饼了。

面活好分成几分,取一份杆成一张大薄饼。

饼上抹一层调好味的肉馅,调肉馅时要多放点油,还可以多多放葱。

抹上肉馅以后象这样叠,注意把空气按出来。

再对折两下变成这样。然后用手小心的按薄一点,这里要稍稍注意别把面皮按破了。

坐上锅,放点油,用中小火煎熟,注意火不能太大,不然表面糊了里面还不太熟。

这样方方的是不是很好笑?呵呵,我觉得挺好做的,也好吃 :)

那种鸡蛋饼,也是这种面吧?
我是南方人,不会做面粉类的饼,但是很喜欢吃啊,呵呵

我用的就是普通中筋面粉,这种饼不用发粉,是死面(就是没有发的面)做的。我这次和的面中等偏干吧,其实可以再软一点,呵呵。你说的鸡蛋饼是哪一种?应该都是普通面粉做的。

面粉其实分3种,我平常用的都是中筋面粉,另外还有低筋、高筋之分。低筋面粉有的地方也叫蛋糕粉,里面的蛋白含量低,因此筋性亦弱,多用来做松软的糕点。相反高筋面粉里面蛋白含量高,筋性强,多用来做面包。我们用的多为中筋面粉,大部分的点心,包子馒头等都是用中筋面粉做的,是最常用的面粉。

鸡蛋饼就是在锅里摊一圈面粉液,再打个鸡蛋上去,就象简版的煎饼果子。如果能在家里做煎饼果子我就要高兴死了
